Pad See Ew is a Thai noodle dish. Noodles are my Kryptonite, Achilles heel, whatever you want to call it I’m weak when it comes to noodles and pad see ew is no exception. I crave them and will ruin my budget by going out to eat them…until now! I now know how to make them and they’re just as good as getting it in the restaurant. This dish is simple to make, preparation is minimal, and impresses a lot of dinner guests. I highly recommend this dish to any noodle fans! Serve it up with some Thai Tea ice cream for an added bonus!

What is Pad See Ew?

Pad See Ew translates to stir fried with soy sauce. I’m Thai, but my Thai isn’t stellar. I didn’t realize that see ew meant soy sauce. I was on the phone with my mom right before my pad see ew attempt. I told her that I was going to try to make it for the first time. She told me how she made it and during one part she said, “…you use the see-ew, you know the soy sauce.” That’s when the light bulb went off in my head.

Pad See Ew is a Chinese inspired dish which is apparent since it’s made with two types of soy sauce, standard (light) and dark soy sauce. The end product is a garlicy noodle dish on the sweeter side with a hint of vinegar.

It can be stir fried with meat or veggies. It can even be vegan-fied, see recipe notes. I chose to make it vegetarian this time and stir fried my noodles with Chinese broccoli and shiitake mushrooms.

Ingredients

  • 2 eggs
  • 8 cloves garlic cloves, minced
  • 1 16 oz package of fresh Sen Yai noodles, separate the noodles
  • 1 pack of Chinese broccoli, cut into bite-sized pieces, thinly slice the stem
  • 1 pack of shiitake mushrooms, quartered
  • Sauce

  • 4 tablespoons dark soy sauce or sweet soy sauce
  • 4 tablespoons oyster sauce
  • 4 tablespoons water
  • 4 teaspoons standard soy sauce
  • 4 teaspoons rice vinegar or white vinegar
  • 4 teaspoons brown sugar

    Garnish

  • 1/2 teaspoon ground white pepper (optional)
  • Directions

      PREPARATION
    1. Prepare the sauce by mixing the ingredients together. Stir until the brown sugar is dissolved.
    2. Heat your non-stick pan on medium heat.
    3. Add Chinese broccoli and shiitake mushrooms to pan. Cook until broccoli stems are almost fully cooked. If you test one piece of the broccoli, it will be tender and not woody.
    4. Add garlic and cook for 1 minute
    5. Crack egg into pan, scramble, and mix with vegetables. Cook until eggs are cooked through.
    6. Add noodles into pan and pour sauce on top. Stir-fry everything in the pan together.
    7. Plate and serve immediately.

      NOTES
    • Dry noodles work too. Follow prep instructions on noodle package. Usually, it requires you to soak the noodles first.
    • I splurge now and purchase minced garlic. It’s so much easier.
    • To vegan-fy this recipe – omit the egg and use vegetarian mushroom oyster sauce. This doesn’t change it much. I’ve had no eggs in the house and made the dish. Tastes just fine!
    • I like to use my Lodge cast iron pan to cook this dish because it’s non-stick and gets really hot. If you have a wok, even better!
